The ultimate coriander and jalapeño salad dressing.

I am not usually a fan of hyperbole but I think this title stands.

There are few more satisfying things in life than truly delicious, nutritious, filling food and this salad dressing is one of those things.

This has become my go to lunch in the past few months and I can’t get enough, it is so fresh, a little bit spicy and all around good mood food. I eat this dressing with a very finely chopped salad, as a dipping sauce for chicken, as a spread in wraps, basically it is very versatile and you will want to have some of this on hand as often as possible. Did I mention that it’s vegan too?

It’s extremely green and very easy to make, all you need is a blender. If you want it less spicy then I would use less chilli but other than that, enjoy!

You will need:

  • 1 bunch coriander
  • 2 jalapeno peppers
  • 1 avocado
  • 4 tablespoons EVOO
  • Half a cup of yoghurt (I used the Coconut Collab coconut yoghurt but natural/Greek will do)
  • 1 tablespoon agave nectar/maple syrup (either will work)
  • 1 clove of garlic
  • Juice of 1 lime
  • Salt & pepper
  • Quarter of a cup of water

To make:

I start off adding all of the liquids to the blender with the garlic and chilli.

Than I add the coriander and season and blend again. After this I add the avocado and blend until smooth. I put it in the fridge for 30 minutes to let the flavours get to know each other but it’s ready to eat there and then.
